Cleats - Sometimes referred to a T cleats or Bollard Cleats. These are the traditional shaped cleat. Generally used for a flag halyard or for larger ropes when mooring up.
Cam Cleats - Spring loaded cams pinch together, allowing rope to move freely one way and prevent it moving in the opposite direction. Allows for quick easy cleating, adjustments and a simple relase as well. Couple these with fairleads and wireleads to make them easier to operate whilst sailing.
Clam Cleats - Simple V shaped design with no moving parts. The V shaped slot has a ribbed finish to lock the rope in place when under load. A more compact option than a Cam Cleat they are popular fittings on Sailing Dinghys where space and weight is at a premium.
